Drainage is a critical component affecting the hygienic performance of food production. Effective, hygienically designed drainage systems help mitigate hazards from the external environment and are central to safe and sanitary food production. The safety of all food products must be supported by carefully selected ingredients, validated and verified processes, quality assurance systems, competent trained staff and also by the hygienic design of premises and equipment used during the manufacturing of these products.
